Cheesecakings.

MMM Cheesecake. Love it. I just don't love the horrible pain and bloating that it gives me later in the day....so....NO AZUCAR!

Cheesecake with no sugar? I know, I know. It's good. I swear. Plus....it's no bake!!

1 packet gelatin
6 packets Splenda
1 cup boiling water
2 packages 1/3 fat cream cheese
1tsp. vanilla extract

1 pkg. 1/3 fat graham crackers
1/4 cup melted margarine
2 tsp. cinnamon
1 packet Splenda
1 pinch salt

1. Mix gelatin, Splenda and boiling water together until gelatin is dissolved. Usually 5 minutes.
2. Blend cream cheese and vanilla until smooth.
3. Slowly incorporate gelatin mixture and cream cheese.
4. Crumble crackers together with cinnamon, Splenda, salt and margarine.
5. Press into the bottom of a glass pan.
6. Pour cheesecake mixture into the pan.
7. Top with fruit and chill 3 hours.

Tacos!

I love tacos. LOVE tacos.

I made some beef and I made some veggie.

Beef first.

Low-fat ground beef
Taco Bell taco seasoning
Pre-made Taco shells ( I prefer mission)
Romaine lettuce
avocado
feta cheese
low-fat sour cream
lime
salt & pepper

1. Make your beef as directed.
2. Chop up the lettuce.
3. Prepare avocado in rough chunks. squeeze 1/2 lime over the avocado. Mix. Salt and pepper to taste.
4. Put it together. Shell, beef, feta cheese, lettuce, sour cream and avocado mixture.

YUM.


Veggie

Taco Bell Taco Seasoning
Sour cream
Small flour tortillas
Chopped Romaine lettuce
Chopped spinach
feta cheese
avocado
tomato
green onion
cucumber

1. Combine Taco Seasoning with sour cream.
2. Spread cream and cheese on a small tortilla.
3. Top as wanted.
4. Fold.
5. Enjoy.

Frozen J-elllo....whaaaa?

Now, i know this seems nast. But, trust me... it's not.

Make jello from the package.

and

freeze for 2-3 hours...


break it up with a s spoon and I sweeeear it tastes like a Sonic slushy.


TRUST ME.

Celery n Cilantro Sopas

So, I looooove soup. Love it. This is a variation on a nasty RR Cream of Leek soup.


Heart of celery
bunch of cilantro
1/4 cup onion, rough chop
1 clove garlic
lemon pepper
2 chicken boullion cubes
1 brick cream cheese
1/4 cup of milk

Salt and pepper to taste.


1. Boil celery, cilantro, onion and garlic with boullion, lemon pepper.
2. Boil for 30 minutes or until celery is tender.
3. Let the mixture rest for 10-15 minutes.
4. Reserve about a cup of the broth.
5. Process in the food processor, pulsing on low.
5. Add milk. Pulse.
6. Add cheese 1/4 of a brick at a time. Pulse.
7. Salt and pepper to taste.




This is really good with a little cheddar cheese garnish.

Quiche action

I'd no musical theatre reference for quiche.....sorry to disappoint.....:P

Anyway, here we go


8 eggs
mushrooms
sweet onion (mayan)
chives
garlic
muenster cheese
ready made pie crust
ground mustard powder
salt pepper
herbs du provance


1. Satue mushrooms, onion and garlic. Sweat them out.
2. Whisk eggs, salt, pepper and herbs together. (all to taste)
3. Lay 2 pieces of muenster cheese in pie crust. Bake 15 minutes @ 350.
4. When pie crusts are done, arrange mushroom mixture at bottom.
5. Fill to top with egg mixture and lay 2-3 pieces of muenster cheese over top.
6. Bake at 350 until done. (knife comes out clean)
7. Enjoy.


Enjoy with sour cream and salsa, or not.
